How do you make Jamaican potato salad from scratch? Can you send me a recipe

Thanks for asking Yvonne!
Here's a classic one - with bacon!

It takes less than 15 minutes and serves 5 persons.

INGREDIENTS

  • 1 whole onion, chopped finely
  • 1/4 tsp cayenne pepper
  • 1 teaspoon dried thyme
  • 1.5 cups of mayonnaise
  • 1 teaspoon of pimento
  • 4 average size bacon slices
  • 3 pounds of peeled irish potatoes
  • 2 teaspoons of hot pepper sauce
  • 3 peeled and halved hard-boiled eggs
  • Salt to taste


PROCEDURE

  1. Bring water to boil and add salt
  2. Place whole irish potatoes in boiling water and cook
  3. When completely cook, drain and cool
  4. Cut the potatoes into 3/4-inch blocks
  5. Transfer into a large bowl
  6. Cook the bacon over medium heat until crisp, stirring occasionally.
  7. Transfer bacon to paper towels and drain
  8. Mix the mayonnaise, pimento, thyme, and cayenne pepper in a bowl
  9. Separate egg yolks and whites
  10. Mash the yolks
  11. Mince the egg whites
  12. Combine the bacon, the mayonnaise mixture, the yolks, the egg whites, the onion and the hot pepper sauce to the potatoes in bowl and toss to coat
  13. Add additional salt to desired taste
  14. Optional - Sprinkle with parsley
  15. Cover and refrigerate until ready for use
