Jamaican Coconut Rice with Curried GoatJamaican Coconut Rice with Curried Goat

by Venesha Johnson | Associate Writer

Bland, plain and flavourless are words that can never be used to describe any Jamaican dish. Rice, for example, is a major staple in cuisines all across the globe and is one of the most common side dishes in Jamaica. However, plain brown or white rice can be a bit boring, and in true Jamaican fashion, they have come up with ways to make the dish more exciting.

Not only do these ways make plain rice more flavourful and delicious, but it also increases its appearance and adds great nutritional value. Some of the most common Jamaican style rice dishes are callaloo rice, rice and peas, pumpkin rice, and probably the only elevated rice dish you won’t be able to identify right away, Jamaican coconut rice.

Is coconut rice good for you?

The simple answer would be yes, coconuts are packed with many nutritional benefits that overall increase the nutrition value of rice.

Is coconut rice better than rice?

Yes, it is. Coconut rice is highly nutritious. One of its stand out components is the high levels of saturated fat in coconut milk. Unlike other fat products, the fat from coconut milk is metabolised quite easily and quickly by the body. Coconut contains high fibre and lauric acid which play a part in improving cholesterol levels in the body.

What nationality is coconut rice?

There is no specific origin of coconut rice, however, because coconut is a tropical fruit and frequently used in most Caribbean dishes, it is fair to assume that that’s where the dish originated from.

Is coconut rice good for diabetes?

A sufficient amount of coconut in your diet will help to increase insulin secretion and lower blood sugar levels.

How many calories are in a cup of coconut rice?

A cup of coconut rice contains around 470 calories.

What is coconut rice made of?

Coconut rice does not contain many ingredients, all you need is rice, coconut milk and your favourite herbs and seasonings. Some people add coconut flakes as well.

Jamaican Coconut Rice Recipe

INGREDIENTS

  • 2 cups rice
  • 12 oz coconut milk (powdered, canned or fresh)
  • ½ cup water
  • A hand full of unsweetened coconut flakes (optional)
  • Scallion, thyme, pimento, garlic, scotch bonnet pepper
  • Salt

PROCEDURE

  1. In a bowl, wash your rice until the water runs clear.
  2. In the pot, add your coconut milk and water then bring to a boil. You can also do this in your rice cooker.
  3. Add your washed rice, coconut flakes, seasonings and herbs.
  4. Once the liquid has begun to boil vigorously and has lowered significantly, turn the heat down and allow it to simmer.
  5. Once the rice is finished, turn the heat off and fluff with a fork.

Serve your coconut rice with curried shrimp, brown stew chicken or any main dish of your choice.

Why is my coconut rice mushy?

Your coconut rice may be mushy if you do not use the correct ratio of coconut milk to water. Coconut milk is thicker than water and is not as easily absorbed by the rice grains which will leave your rice a bit sticky and with hard grains. On the other hand, using too much water cause the rice to absorb too much water and become too soft.

Does coconut rice taste like coconut?

You will get a hint of coconut in your rice, coconut is not very strong in flavour. As a matter of fact, you will get a stronger coconut flavour from your rice if you use coconut powder instead of freshly juiced coconut milk.

Can you freeze coconut rice?

Yes, you can. Just ensure that the container is properly sealed.

Why does my coconut rice not taste like coconut?

You either used too much water, or your coconut milk was not strong enough.

How long does coconut rice last in the fridge?

Because coconut milk spoils easily, you will need to refrigerate your coconut rice within 4 hours of it being out and it can remain refrigerated for up to 5 days.

Adding coconut milk, such an easy and simple step, is an effective way to improve on plain rice. Jamaican coconut rice is not just delicious and nutrition-packed, its simplicity and versatility makes it a great side dish for any meal.
