Delicious, no doubt, but as Andrea pointed out in a recent interview with Wellesley, why not mix it up a bit? The abundance of breadfruit in Jamaica calls for some creative culinary exploration.

The idea that breadfruit was a staple for our enslaved ancestors might contribute to the perception that breadfruit is a โ€œpoor peopleโ€ food, but it's time to break free from that mindset. Andrea, our breadfruit enthusiast took matters into her own hands and decided to turn this narrative around.

Starting with a mouthwatering breadfruit pudding, she ventured into uncharted culinary territory and hasn't looked back since. In fact, she's cooked up over 30 different breadfruit recipes!

Beyond its historical significance, breadfruit is a nutrient-dense fruit. Yes, itโ€™s a fruit, even though we have to cook it first. Well, I have never heard of anyone eating breadfruit raw. Have you? It's loaded with essential vitamins and minerals, making it an excellent addition to a healthy diet. By diversifying our breadfruit recipes, we not only create a more inclusive dining experience but also break down stereotypes associated with this incredible fruit.

Andrea's dedication to showcasing the versatility of breadfruit is nothing short of inspiring. From breadfruit chips to breadfruit cheesecake (yes, you read that right!), she's demonstrated that there are countless ways to elevate this Jamaican treasure. Now, let me share with you my top ten of Andrea's innovative breadfruit creations.

  • Breadfruit Rice Salad
  • Breadfruit Rice and Peas
  • Breadfruit Stuffing
  • Breadfruit Cereal
  • Breadfruit Rum Cake
  • Breadfruit Pudding
  • Breadfruit Oatmeal Cookies
  • Breadfruit Cheesecake
  • Breadfruit Flatbread
  • Breadfruit Quiche

You know what, let me take it a bit further and give you the actual recipe for my favourite on the list. The breadfruit Rum Cake. I am for anything with a little (or a lot) of our Jamaican rum.

RECIPE For 100% Breadfruit Rum Cake

INGREDIENTS

  • 4 Eggs
  • 1 Cup brown sugar
  • 2 Cups of breadfruit flour
  • 1 Cups Vegetable Oil
  • 1 Cup Prunes
  • 1/2 Cup of Skimmed Milk
  • 1tsp of baking soda
  • 1tsp cinnamon powder
  • 1tsp vanilla
  • 1tsp vinegar
  • 1 tablespoon orange peel powder

[ For Glazing The Cake ]

  • 1/4 Cup Sugar
  • 1/2 Cup Water
  • 1 Cup of preferred rum

PROCEDURE

  1. Beat eggs and sugar until light and airy (3-4 minutes or until the colour changes).
  2. Drizzle in the oil and continue beating.
  3. Add flour and milk manually (in three parts).
  4. Add vanilla and chopped prunes and mix again manually.
  5. Preheat to 325F (162C) and pour the batter into the baking tin.
  6. Bake for an hour.

Note:
Consider a medium size pan (8 inches)

[ For Glaze ]

  1. Mix Sugar and Water and bring to boil
  2. Add 1/2 stick of butter, bring to boil
  3. Add rum to the mixture, mix, and pour on top of the hot cake as it comes out of the oven.
  4. Allow to cool and marinate for days, add more rum in a few days if necessary.
