Food is one of the things that make us stand out. I know you have heard of jerk chicken and festivals, and once you have discovered that you probably have come across fish and bammy as well. But did you know that, that crispy delicious bammy is made of cassava?

What is Jamaican cassava?

The shrubby root vegetable cassava often referred to as yucca, tapioca, manioc, and manihot, is a common crop in Jamaica. The big, starchy roots of the vegetable are the component that is most frequently consumed.

One thing cassava is normally used to make is bammy, but right behind that, you will find the Jamaican Cassava Pudding or as we say, “cassava pone”.

What is cassava pone?

Cassava Pone, Yucca Cake or whichever name you prefer, is a sweet pastry made from grated cassava, coconut milk, flour, and spices.

There are variations of this delectable dessert across the Caribbean region, Central America, and South America; notably Barbados, Trinidad, and Guyana. Additionally, I've seen Filipino variations known as Panlasang Pinoy.

What are the ingredients in the pone?

Cassava pone is made of primarily, cassava, milk, sugar and other spices.

Is it safe to eat cassava with black lines?

There will be black lines, spots, or discolourations on the flesh. If you do get cassava that has some hidden black streaks in the flesh, you can clip those out and use the rest. Purchase an extra root to make up for it, or slice a tiny piece of the tip-off at the store to check for white flesh.

Is cassava poisonous?

Cassava is an edible tuberous root that is frequently processed into flour. It contains cyanogenic glycosides, which, if not adequately detoxified by soaking, drying, and scraping before consumption, can cause lethal cyanide poisoning. Rarely are acute cassava-related cyanide poisoning outbreaks reported.

Which part of cassava is poisonous?

A poisonous substance called linamarin is present in cassava roots naturally. Your body converts this to hydrogen cyanide, which can result in cyanide poisoning. Consuming unprocessed cassava root has been related to cyanide poisoning, konzo, a paralytic condition, and even death.

Jamaican Cassava Pudding Recipe

INGREDIENTS

  • 2 cups grated sweet cassava
  • 1/2-cup brown sugar
  • 3 cups coconut milk
  • 1 tbs vanilla extract
  • 1 tsp nutmeg
  • 1 tsp ground cinnamon
  • 1/4-cup flour
  • 1 tsp baking powder
  • 1 tbs soft butter
  • 1 tsp salt

PROCEDURE

  1. Combine cassava, coconut milk, vanilla, and sugar in a bowl
  2. Add salt and baking powder to the flour mixture before adding it to the cassava mixture. 
  3. Blend until uniform. 
  4. Pour into a greased and lightly dusted 6 x 6 baking sheet, and bake for two hours at 300 degrees in a preheated oven.

Serve and enjoy!

How do you store pones?

Can’t eat all your cassava pone in one sitting? Well, no need to worry. You can have them another day. This cassava pone can sit on your countertop, at room temperature, for up to 24 hours.

Afterwards, they will need to be refrigerated, where they will be able to last for up to 3 days. If you want them to serve much longer, simply store them in an air-tight container and place them in the freezer.

How long is cassava poisoning?

If you consume a meal made of cassava, while the chances are slim, getting poisoned if not prepared properly is a possibility. Symptoms usually appear 4-6 hours after a meal because the cyanogenic glycosides, which contain cyanide, are digested and release cyanide.

Signs and Symptoms Of Cassava Poisoning

As mentioned before, if prepared properly you have little to no chance of getting poisoned by consuming cassava. However, there are signs and symptoms you can look out for:

  • Vomiting
  • Fever
  • Malaise
  • Dizziness and others

The cassava pone or pudding is just one of the many ways that Jamaicans use cassava, and again of course the bammy. It is also used to make chips, cassava punch and so much more.

It may cause a bit of concern initially if you are not familiar with it but once you can get past that, you will definitely enjoy it.
