The Jamaican Patty is a tasty and healthy snack. But the best part is how versatile it is. There are really no rules when it comes to the perfect patty filling. Well, maybe one, do not make the filling runny, but besides that, you can use pretty much anything to make the filling and I am about to share with you one of the most popular ones. The vegetable patty.

What I love so much about the vegetable patty is that it is a healthier alternative and it combines two of my favourite Jamaican dishes; patties and the traditional Jamaican steamed vegetable mix. Now this itself has no strict ingredients.

For example, the Jamaican steamed vegetable mix is done in multiple ways. For some, it’s a combination of cabbage, callaloo and carrots, or callaloo and pok choi, or pretty much any combination of cabbage, pok choi and callaloo.

This recipe has my favourite combination which is cabbage, callaloo and carrots, plus some spices and seasonings for additional flavour.

Jamaican Vegetable Patty Recipe

INGREDIENTS

Ingredients for vegetable patty filling

  • 1 whole medium cabbage- washed and chopped
  • 5 stalks callaloo medium carrots- washed, stripped and chopped
  • Red and green bell peppers- chopped
  • Onion- chopped
  • Thyme
  • Garlic- minced
  • Scotch bonnet pepper- seeds removed and chopped
  • Black pepper
  • Salt
  • Butter

PROCEDURE

Preparing the Filling

  1. To a skillet add some butter and allow to melt. Add all your seasonings, bell peppers, onion, garlic, scotch bonnet pepper then stir.
  2. Add the cabbage and callaloo simultaneously, then cover and allow it to sweat and reduce for 5 minutes.
  3. At this point the vegetables should be reduced enough for you to stir them properly, ensuring that all the seasonings and vegetables are well distributed.
  4. Add salt, black pepper, thyme and any other seasonings you may like. Allow to continue cooking for another 15 minutes or until the vegetables are soft.

Remove and set aside to cool.

Ingredients for making the dough

  • 3½ cups all-purpose flour
  • 1½ tsp salt
  • 1 tbsp brown sugar
  • 4 tsp Jamaican curry powder
  • 1 cup flavoured shortening
  • ¼ cup vegan butter or margarine
  • ¾ cup ice-cold water

PROCEDURE

Instructions for making the dough

  1. Sift the flour and salt together in a large mixing bowl, and then add the brown sugar and curry powder.
  2. Butter and shortening should be frozen in cube form.
  3. Add the cubed shortening and margarine to the flour to coat. Use your fingers to flatten and squeeze the cubes.
  4. Until a dough develops, add the water gradually while mixing after each addition.
  5. Onto a sizable piece of parchment paper that has been lightly dusted with flour, spread the dough out. The dough should be lightly kneaded and pressed into a ball.
  6. Add extra flour and place a second sheet of parchment paper on top of the dough. The dough is rolled out into a rectangle.
  7. The dough should be folded in half so that the two ends meet in the middle. and fold once more.
  8. Roll and fold the dough one more after giving it a quarter turn.
  9. For at least an hour, wrap the dough in cling film and put it in the refrigerator (not the freezer) to chill and relax.

Making the Patties

  1. Set the oven's temperature to 400 °F (200 °C).
  2. On parchment paper, divide the dough into 6 equal pieces.
  3. Each portion should be rolled to a thickness of about 1/8 inch between the second layer of paper.
  4. Spoon the steamed vegetables into the centre of each part of the dough after evenly dividing it. Fold the dough over, use a fork to bind the edges, and then trim off any extra dough.
  5. The patties should be baked for 30 to 35 minutes, or until the edges are browned, on two baking pans coated with parchment paper. Serve Hot.

Remember you can make this version of a vegetable patty or use any combination of vegetables that you prefer.
