1. Jamaican Jamaican Ital Stew Recipe

INGREDIENTS

- 1 cup dried red kidney beans (soaked overnight)
- 1 sweet potato, diced
- 1 carrot, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 can of coconut milk
- 2 cups vegetable broth
- 1 teaspoon thyme
- 1 scotch bonnet pepper (whole)
- Salt and pepper to taste

PROCEDURE

  1. Cook the soaked beans until tender, then drain.
  2. In a large pot, sauté the onion, garlic, and ginger until fragrant.
  3. Add the sweet potato, carrot, and bell pepper. Cook for a few minutes.
  4. Pour in the coconut milk and vegetable broth.
  5. Add the beans, thyme, and scotch bonnet pepper. Simmer for 30 minutes.
  6. Season with salt and pepper. Remove the scotch bonnet before serving.

2. Jamaican Ackee and Tofu Scramble Recipe

INGREDIENTS

- 1 can ackee (drained and rinsed)
- 1 block firm tofu (crumbled)
- 1 small onion, chopped
- 1 tomato, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1 tablespoon olive oil

PROCEDURE

  1. Heat oil in a pan and sauté the onion, garlic, bell pepper, and tomato.
  2. Add the crumbled tofu and turmeric. Cook until tofu is slightly browned.
  3. Gently fold in the ackee and cook for a few more minutes.
  4. Season with salt and pepper. Serve warm.

3. Jamaican Vegan Jamaican Patties Recipe

INGREDIENTS

  • For the dough:
    - 2 cups flour
    - 1/2 cup vegan butter
    - 1/2 teaspoon turmeric
    - 1/2 teaspoon salt
    - Cold water

  • For the filling:
    - 1 cup cooked lentils
    - 1 onion, chopped
    - 2 cloves garlic, minced
    - 1 scotch bonnet pepper, minced
    - 1 teaspoon thyme
    - 1 teaspoon allspice
    - Salt and pepper to taste
    - 1 tablespoon olive oil

PROCEDURE

  1. Prepare the dough by mixing flour, turmeric, and salt. Cut in the vegan butter and add cold water to form a dough. Chill for 30 minutes.
  2. For the filling, sauté the onion, garlic, and scotch bonnet pepper in olive oil.
  3. Add the lentils, thyme, allspice, salt, and pepper. Cook until well combined.
  4. Roll out the dough and cut into circles. Place the filling in the centre and fold over to form patties.
  5. Bake at 375°F (190°C) for 25 minutes, until golden brown.

4. Jamaican Vegan Callaloo Recipe

INGREDIENTS

- 1 bundle of callaloo (or spinach), chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1 bell pepper, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 tablespoon olive oil

PROCEDURE

  1. Heat oil in a pan and sauté the onion, garlic, bell pepper, and tomato.
  2. Add the callaloo and thyme. Cook until wilted.
  3. Season with salt and pepper. Serve warm.

5. Jamaican Rice and Peas Recipe

INGREDIENTS

- 1 cup long-grain rice
- 1 cup canned kidney beans (drained and rinsed)
- 1 cup coconut milk
- 1 cup water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 scotch bonnet pepper (whole)
- Salt and pepper to taste

PROCEDURE

  1. In a pot, sauté the onion and garlic until fragrant.
  2. Add the rice, beans, coconut milk, and water. Stir well.
  3. Add the thyme and scotch bonnet pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer until rice is cooked.
  5. Remove the scotch bonnet before serving.

6. Jamaican Vegan Jerk Tofu Recipe

INGREDIENTS

- 1 block of firm tofu, pressed and cubed
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon lime juice

PROCEDURE

  1. In a bowl, mix jerk seasoning, olive oil, soy sauce, and lime juice.
  2. Toss the tofu cubes in the marinade and let sit for at least 30 minutes.
  3. Grill or bake the tofu until crispy and golden brown.

7. Jamaican Fried Plantains Recipe

INGREDIENTS

- 2 ripe plantains, sliced
- 1/2 cup coconut oil
- Salt to taste

PROCEDURE

  1. Heat coconut oil in a pan.
  2. Fry the plantain slices until golden brown on both sides.
  3. Remove from oil and drain on paper towels. Sprinkle with salt.
