Jamaican Peanut Drops are a delectable treat. This traditional Jamaican delicacy offers a burst of flavour and a hint of spice, making it a favourite snack among many, especially if you have a sweet tooth.

While it is most common to get peanut drops from street vendors, especially those we call “Nutsy” (because they sell mostly peanut snacks), fortunately, whether at home or abroad, you can make you’re own at home.

What you’ll need:

When I tell you this is one of the easiest things you will ever make, I am not kidding. These are the ingredients you will need:

Roasted Peanuts: It is most common to use roasted peanuts, but you can also choose to use raw peanuts.
Organic Cane Sugar: This is more of a preference; any brown sugar will do. You could also try white sugar but, you may have to up the amount of sugar used to get the same result.
Ginger: Adding a zingy kick, fresh ginger not only enhances the flavour profile but also offers its renowned medicinal properties.
Cinnamon: Infusing warmth and depth, ground cinnamon lends its aromatic essence, complementing the sweetness with its woody notes.
Vanilla Extract: For a touch of sophistication, vanilla extract introduces complexity, elevating the overall taste experience.

Jamaican Mackerel Run Down Recipe

INGREDIENTS

  • 2 cups roasted peanuts (292g)
  • 1½ cups raw cane sugar (300g)
  • 2 cups water (475ml)
  • 3 tablespoons minced ginger (21g)
  • ½ teaspoon cinnamon (1g)
  • 1 tablespoon vanilla extract (13g)
  • 1 tablespoon almond essence (13g)

PROCEDURE

  1. If using peanuts with red skin, soak them in boiled water for 30 minutes before use. Rub away the skins using your hands. Skip this step if using blanched peanuts.
  2. Preheat the oven to 200°C/400°F.
  3. Line a baking tray with parchment paper.

Roasting the Peanuts:

  1. Spread the peanuts evenly on the prepared baking tray, ensuring they are not overcrowded.
  2. Roast the peanuts in the preheated oven until they turn golden brown. Keep an eye on them as some may ‘brown’ quicker than others. Remove any peanuts that brown faster to prevent burning.
  3. Once roasted, set aside. Re-line the baking tray with fresh parchment paper.

Preparing the Peanut Drops:

  1. In a medium-sized non-stick saucepan, combine the roasted peanuts, raw cane sugar, minced ginger, and water. Bring the mixture to a boil over medium heat, stirring occasionally.
  2. Once boiling, reduce the heat to medium and let the mixture simmer. Stir frequently to ensure even cooking and to prevent sticking.
  3. Allow the mixture to simmer until it thickens and almost all the liquid has evaporated, coating the peanuts. This may take approximately 50 minutes to over an hour.
  4. After around 50 minutes, add the cinnamon, vanilla extract, and almond essence to the saucepan.
  5. Continue simmering until the mixture becomes very sticky and clings tightly to the peanuts, with minimal liquid remaining.

Forming the Drops:

  1. Remove the saucepan from the heat.
  2. Using a spoon, drop 1-2 spoonfuls of the mixture onto the prepared parchment paper-lined baking tray. Ensure there is enough space between each drop to prevent them from sticking together.
  3. Allow the drops to cool and set completely at room temperature.

Enjoyment:

Once the Jamaican Peanut Drops have cooled and set, they are ready to be enjoyed!

Tips and Tricks for the Perfect Peanut Drops

To ensure your Peanut Drops turn out flawlessly, consider these handy tips:

Stir Regularly: Keep the mixture moving to prevent crystallisation and ensure even cooking.
Monitor Consistency: Test the mixture’s consistency by observing its syrupy texture, indicating readiness.
Personalize Flavors: Tailor the recipe to your preferences by adjusting the amount of cinnamon or vanilla extract or, even experimenting with coconut sugar for a deeper flavour profile.
Prep Your Workspace: If parchment paper isn’t available, grease the baking tray with coconut oil for easy release.
Customize Nut Texture: Whether you prefer peeled or unpeeled peanuts, the choice is yours. Adjust according to your taste preferences.
